Spicy Korean Stir Fry Udon 韓式炒烏冬麵(辣)
Choice of Noodle (Udon, Soba, Vermicelli)
Ingredients:
(For 3-4 servings)

Choice of meat (chicken, pork, and/or beef) or seafood (shrimp, calamari, mussel, etc) or combination of both

Egg (1) (optional)

Soy sauce (1 1/2 tbsp)
(TIP #1: taste and color of final product will vary based on soy sauce brand. We recommend light soy sauce with lower sodium)

Cooking wine (2 oz)
-
Sesame oil (1 tsp)

Water (1 oz)
-
Sugar (1 tbsp)

Vegetable oil
-
Onion (medium-julienne/thinly sliced)
-
Scallion (thinly sliced)

Choice of vegetable (carrot, cabbage, zucchini, etc.)

Udon Noodle (or choice of noodle)
-
White sesame seeds
-
Spicy Korean Marinade Powder (3tbsp)
Instruction (Sauce/Base Preparation):

In a bowl, measure 3 tbsp of Spicy Korean Marinade Powder

Add 1 tbsp of sugar, 2 oz wine, and 1 oz water
-
Add 1 1/2 tbsp soy sauce and 1 tsp sesame oil
-
Mix well to create base/sauce for stir fry
Instructions:

Follow Korean BBQ meat instructions to marinate the meat/seafood you plan to use in stir fry

If using frozen/fresh udon, cook udon in hot boiling water for 40-60 seconds (al dente) or according to package directions. If using dried noodles, cook noodles according to package instruction and set aside (drained) ready for stir fry.

Heat up saute pan on medium-high heat and add vegetable oil

Add onions and cook till slightly translucent

Add vegetables and cook till slightly tender

Add marinated meat/seafood and cook for 3-5 minutes or until fully cooked. Stir occasionally

Add cooked noodles and sauce base. Stir thoroughly until all ingredients evenly coated with sauce

Turn off heat and add scallions. Top with sesame seeds before serving
Tip: Use filtered drinking water for base/sauce preparation
Tip: Do not overcook noodles as they will be added back to pan for final stir fry
Tip: (optional) Add a stir fry egg into noodle for additional texture and flavor or add a fried egg/sunny side up egg on top of noodle for added aesthetic/taste
Tip: Add mushroom, fish cake, kimchi, etc for unique versions of Korean Stir Fry Udon
